The l'Amandier building is no ordinary setting. Built in the 11th century as a courthouse, given by the Count of Antibes to the monks of Saint-Honorat, it has crossed the ages keeping its "monks' rooms" intact. These walls later housed mills that extracted the fragrant oils of local flowers to supply the perfumeries of Grasse. In 1977, Roger Vergé opened l'Amandier here, developing his famous "Cuisine du Soleil" and making it a favourite haunt of Côte d'Azur artists. Today a new chapter is being written: the complete renovation carried out five years ago has given rise to an elegant, cosy interior, where an authentic mill stands as the centrepiece.
